Instructions

  1. Cook the diced bacon in a large pot over medium heat until crispy. Transfer to a paper towel. Leave about 2 tablespoons drippings in the pot.

  2. Sauté the onion in the drippings until translucent, about 5 minutes. Add the garlic and cook 1 minute.

  3. Melt the butter. Sprinkle in the flour and cook 1-2 minutes until lightly golden.

  4. Gradually whisk in the chicken broth. Add the potato cubes, bring to a boil, then reduce heat, cover, and simmer 15-20 minutes until tender.
