Crockpot Al Pastor Pork with Cranberry and Orange

Instructions

  1. Pat pork dry. Rub with avocado oil and 2 tbsp Al Pastor seasoning. Optionally sear on all sides in a hot skillet, about 2 minutes per side.

  2. In the same skillet, sauté sliced yellow onion and minced garlic for 2 minutes. Deglaze with cranberry juice, juice of 1/2 orange, white wine vinegar, and remaining 1 tbsp Al Pastor seasoning. Scrape up browned bits.

  3. Layer carrots and potatoes in the bottom of the crockpot. Place the seared pork on top of the vegetables. Pour the onion-garlic sauce over the pork. Add diced green chiles and oregano on top.

  4. Cook on LOW 6-7 hours or HIGH 3 1/2-4 hours, until the pork shreds easily and vegetables are tender.

  5. Remove pork, shred, and return to the pot. Stir in lime juice. Taste and adjust salt or seasoning.

  6. Serve in warm corn tortillas with desired toppings.
