Crockpot Al Pastor Pork with Cranberry and Orange
Slow cooker pork loin with Al Pastor seasoning, cranberry-orange pan sauce, green chiles, carrots, and potatoes for tacos.
Instructions

Pat pork dry. Rub with avocado oil and 2 tbsp Al Pastor seasoning. Optionally sear on all sides in a hot skillet, about 2 minutes per side.

In the same skillet, sauté sliced yellow onion and minced garlic for 2 minutes. Deglaze with cranberry juice, juice of 1/2 orange, white wine vinegar, and remaining 1 tbsp Al Pastor seasoning. Scrape up browned bits.
Prep -
Layer carrots and potatoes in the bottom of the crockpot. Place the seared pork on top of the vegetables. Pour the onion-garlic sauce over the pork. Add diced green chiles and oregano on top.

Cook on LOW 6-7 hours or HIGH 3 1/2-4 hours, until the pork shreds easily and vegetables are tender.
Cooking -
Remove pork, shred, and return to the pot. Stir in lime juice. Taste and adjust salt or seasoning.

Serve in warm corn tortillas with desired toppings.
Notes
- Liquid base uses cranberry juice with orange and reduced vinegar.
