Fluffiest Blueberry Pancakes
Thick homemade-buttermilk blueberry pancakes with a short batter rest.
Instructions

Stir ¾ cup milk with 2 tablespoons white vinegar or lemon juice. Let sit about 5 minutes to make homemade buttermilk. Lemon juice is preferred if you have both.

Whisk flour, sugar, baking powder, baking soda, and salt in a medium bowl.
Prep -
Whisk buttermilk, egg, melted butter, and optional vanilla and lemon zest. Pour into dry ingredients and fold gently until just combined; batter should stay lumpy.

Rest batter 5 to 10 minutes.

Heat a nonstick skillet or griddle over medium to medium-low. Melt about 1 teaspoon butter.
Cooking -
Scoop ⅓ cup batter per pancake. Sprinkle 6 to 10 blueberries on top of each.

Cook 2 to 3 minutes until bubbles form and edges set. Flip and cook 1 to 2 minutes until golden and cooked through.

Serve immediately with butter and syrup.
Notes
- Batter rest and placing blueberries on top after pouring help keep pancakes fluffy and less purple.
