Instructions

  1. Cook basmati rice according to rice cooker directions and keep warm.

  2. Cook sweet potato fries according to package directions (air fryer preferred). Immediately season with salt, pinch cumin, and optional paprika or chili powder.

  3. Toast cashews in a dry skillet over medium heat 3-5 minutes until fragrant and lightly golden; remove.

  4. Heat oil for broccoli, cook florets 4-5 minutes, add garlic and cook 1 minute more, season with salt and pepper, and remove while bright green and slightly crisp.

  5. Toss shrimp with cumin, coriander, turmeric, salt, and pepper. Whisk sauce ingredients: honey, soy sauce, Sugar in the Raw, minced garlic, cornstarch, water, and optional pickled pepper brine.

  6. Heat oil in a large skillet over medium-high heat. Cook shrimp 1-2 minutes per side until almost done. Add sauce and stir continuously until glossy and thick, about 2-3 minutes. Remove from heat and stir in half the cashews.

  7. Optional: reheat leftover egg-corn-pepper mix in a skillet until hot. Whisk optional sweet-spicy drizzle if using.

  8. Set out rice, shrimp, broccoli, fries, remaining cashews, green onions, and optional toppings for a bowl bar.
