Lauren's Chicken Salad
Chicken Salad with Grapes and Cashews
Creamy chicken salad with lots of halved grapes, whole cashews, garlic salt, and a touch of mustard. Lauren's version.
Instructions

Shred or dice the chicken into bite-size pieces. Drain canned chicken well, or pull meat from a rotisserie bird and discard skin and bones if you prefer.

In a large bowl, stir together the mayonnaise, mustard, garlic salt, onion powder, and pepper until smooth. Taste and adjust seasoning before adding the chicken.
Prep -
Fold in the chicken until evenly coated. Add more mayo a spoonful at a time if you want it wetter.
Cooking -
Gently fold in the halved grapes, whole cashews, and optional finely minced celery.

Serve right away, or chill 20 to 30 minutes so the flavors settle. Great on sandwiches, croissants, crackers, or over greens.
Notes
- Lauren's recipe: she wings it by feel. These amounts are a practical starting point for about 4 servings; she may refine exact measures next time.
- Lauren prefers canned chicken. Garr prefers rotisserie. Both work; rotisserie is usually a bit juicier, canned is faster.
- Grapes and cashews are meant to be generous. Add more of either if that is how Lauren makes it at your house.
- Different from Classic Chicken Salad Sandwich Filling on this site (that one uses poppy seeds, lemon pepper, celery salt, and optional fruit or nuts).
