Twice-Baked Potatoes with Steak, Bacon, Corn, Cheese, and Ranch Cream
Leftover baked potatoes restuffed with steak, bacon, corn, cheese, Greek yogurt, ranch seasoning, and jalapeños.
Instructions

Preheat oven to 400°F.

Slice baked potatoes in half lengthwise. Scoop insides into a bowl, leaving about 1/4 inch of potato on the skin.
Prep -
Combine potato insides with steak, bacon, corn, half the cheese, Greek yogurt, sour cream, cottage cheese, ranch seasoning, jalapeños, and seasonings. Mix until creamy.
Cooking -
Spoon filling back into skins. Top with remaining cheese.

Bake 15-20 minutes until heated through and cheese is golden. Serve hot with optional garnishes.
Notes
- Sour cream and cottage cheese are 2 tsp each.
