  3. Heat the oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken in a single layer and cook 4 to 6 minutes, turning occasionally, until lightly browned. The chicken does not need to be cooked through yet. Transfer to a plate if the pan is crowded.

  4. Add the chopped fresh carrots to the same pan. Cook 4 to 5 minutes, stirring occasionally, until they begin to soften and pick up a little color while staying firm in the center.
