Instructions

  1. Heat olive oil over medium-high heat. Sear whole chicken breasts 2 to 3 minutes per side until well browned (plain or with a light sprinkle of salt and pepper). Transfer to the slow cooker; do not cook through.

  2. In the same skillet over medium heat, cook onion, jalapeños, garlic, and dried basil 4 to 5 minutes until softened. Add curry powder and toast 30 to 60 seconds. Add ginger and cook 30 seconds.

  3. Deglaze with ¼ cup chicken broth, scraping up browned bits. Pour everything into the slow cooker.

  4. Add coconut milk and remaining salt. Stir gently around the chicken.

  5. Cook on LOW for 4 to 6 hours until chicken reaches 165°F.

  6. Remove chicken, cut into bite-sized pieces or shred, and return directly to the slow cooker.

  7. Whisk cornstarch with cold water. Stir into the slow cooker and cook on HIGH 20 to 30 minutes until thickened.

  8. Stir in fresh basil and optional lime juice just before serving. Serve over jasmine rice.
