PU and PVC keep coffee on the mat so you can wipe it. Cloth drinks a spill. If coffee lives on the desk, I'd start with PU. Waterproof on a listing is the surface, not a warranty. A curled corner, a seam, or a mug off the kettle can still mark the wood or the pad.
